Sweet Potato Brownies



Ingredients:

1 sweet potato
3 eggs, whisked
1/4 cup Gold Label Virgin Coconut Oil, melted
1/3 cup raw honey
1/2 cup Enjoy Life Chocolate Chips
3 tablespoons Coconut Flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
pinch of salt


Instructions:

1) Time to bake that sweet potato. Preheat your oven to 425 degrees, use a fork to puncture holes all around it, then throw in the oven for 25-30 minutes. (I’m sure you could microwave it, but I like the ole fashioned way. I’m just so ole fashioned.)
2) Once your sweet potato is soft and cooked through, peel off the skin and mash it up in a bowl. And turn your oven down to 350 degrees.
3) Now add your wet ingredients: coconut oil, honey, vanilla, and whisked eggs to the bowl and mix together.
4) Then add your dry ingredients: coconut flour, cocoa powder, baking powder, cinnamon, salt and chocolate chips.
5) Mix well to incorporate all that goodness.
6) Pour into an 8×8 glass baking dish.
7) Bake for 30-35 minutes.
8) Let rest to cool a bit.
9) Eat those b*tches. Try not to eat them all in one sitting.

Reflecting on 2012 and not waiting until 2013 to make a change in your life!

As 2012 quickly comes to an end, it's natural to begin to reflect on the year you have had and all the things that have happened. The peaks and the pits, the good and the bad... You may look back and smile, or you may dive into a litre tub of chocolate chip ice-cream using the biggest spoon you can find.

If you think of 2012 as 'not my year', STOP! Of course 2012 was your year. Every year is your year. Every year is open to a mountain of possibilities. You just have to tie your shoe laces, get on your running shorts and climb that mountain! Every year bad things happen to people but it is how you deal with the negative that matters!

If you look back on your year and think, 'Yep! This year was my year! Best year of my life!" Well.. It's the best year of your life, so far! There is always many great things to come and more things to achieve.

Take a minute.. or two.. or three.. to reflect on 2012.

What was the best thing that happened to you this year?
What was the worst?
How did you deal with the negative?
How did you deal with the positive?
What didn't you do this year that you really wanted to?
What did you do this year that you can be proud of?
How do you want 2013 to be different?

2013 is going to be the year of opportunities for you readers! Let's all get aboard the optimist train and have a wonderful rest of 2012 and begin 2013 in a positive light. Now is the time to think about all the things you want to achieve next year and to begin to make them happen!

Do you want something to change in your life? BEGIN NOW! Don't wait until 2013. Start this very minute. This very second. Change your mind, change your body, change your life. Whatever you want, (within reason of course, you can't teleport or anything like that...) it's yours!


Write a list of all the things you would like to achieve or accomplish in 2013 and how you can start to make them happen. Writing your goals down is the best way to ensure that you do it!

Let's not dwell on 2012 if it wasn't as you planned everyone. Let's celebrate our lives and start to make a change in the areas necessary. Enjoy and be grateful for the remainder of 2012, the beginning of 2013, and the rest of YOUR life!
